I'm wondering if there is a flowcharting/wireframing plugin for
Illustrator? Something that makes the arrows and shapes connect more
dynamic (features like snap, grid) like Visio or Omnigraffle?

That would be a HOT plug-in.
never heard of one though.
i thought using illustrator for IA work was passe... what i wish is
that the little arrows worked better in omnigraffle. things always
seem to break after i close and reopen the file.
Also take a look at MindManger 7 by Mindjet. very cool app. for quick
IA work.

Think we can talk them - or someone with both VisioPro and
OmniGrafflePro - into creating an Omni version ?

No plug-in that i know of, however, Inkscape has a handy connector tool.
Download and try Inkscape (you will need X11 for Mac OS X (available
on your Mac OS X Install DVD)). The drawing metaphors are different
than Illustrator, but I've found them to be internally consistent.
You can export to Illustrator if you wish through SVG, and render to
a number of different raster formats. As with all things, YMMV.

Freehand has this capability, but since Adobe is dropping development...
To design is much more than simply
to assemble, to order, or even to edit;
it is to add value and meaning,
to illuminate, to simplify, to clarify,
to modify, to dignify, to dramatize,
to persuade, and perhaps even to amuse.

I'm using Visio right now, but I really like using Illustrator to do wireframes and flows, I don't know why, I just do.

Almost off topic but fairly relevant as I had your feeling but reacted
in the opposite direction :P
I used Illustrator to create sketchy shapes for Visio. You can
download the Visio shapes template from here:
