Oliver, do you mean HCI as specifically the academic research
disciplines that combine computer science and cognitive psychology,
or do you mean HCI as in User Experience/UCD etc.?

Actually it would be great to know conferences in both areas!
I think interaction08 is really going to be amazing. I'm not just
saying that b/c I've put in 100's of hours into its creation (See
Dan's recent interview on Boxes & Arrows for more: http://www.boxesandarrows.com/view/interactions-08-in
I'm saying it because I look at the content, format, setting, and
people and I can't really imagine a better conference.
For people in NYC, I'm putting my money where my mouth is on this
one as well. Register at tomorrow night's holiday part
(http://ixda.org/discuss.php?post=23021) and I buy you a drink.
There are lots of other options out there. I think the corporate
conferences though right now tend to be better than the rest of the
organizational conferences. UIE puts on a heck of a show and I have
only hears amazing things about Adaptive Path's stuff and good
things about NN/G's stuff.
If I had to go the organizational route, IA Summit for webbies is
great. And I mean, It's Miami this year!!!! Not Florence, but
definitely better than most other places.
Further afield and more HCI is DIS, and then there are the many many
other sigchi sponsored conferences.
Yes, UPA is missing from my list. Never been, never heard great
things about it except from those who belong to that community
already. Community is a great reason to go to a conference, BTW.

The two that come to mind immediately are the UPA conference and the IA Summit.
