I am looking for good examples of product user's rating systems in
terms of visual representation. Do you have any suggestions or
reference I could have a look at?
iTunes - song/track rating (circles become stars when you click and
drag across)
Almost any site that sells stuff also has ratings. Tons out there!
What's your specific question related to ratings? Are you trying to
create a different way than the 5 star system?

www.iterating.com uses jreviews. it's a standard in open source

You can five the famous "five-stars pattern" on almost every
shopping engine (Kelkoo.co.uk, PriceGrabber, shopping.yahoo.com...).
Beyond that, I like the way Summize tried to go ahead of this
"five-stars pattern":
