Volunteer work for user experience

Its very easy to find volunteering opportunities for web design and graphic design, but cannot say that for user experience roles. I want to know how to get voluntary user experience work. I searched online and could not find any. :(

Some background: I am in the process of moving to UX. That's why I do not have any real UX work to show in my portfolio. I have taken online Depaul HCI classes and can only show my homework assignments. I have done some Graphic Design and Web Design as well. I plan to put that in my portfolio.

If nobody offers voluntary UX work, how do beginners start to build their portfolio? Do they start with their own projects (this must be hard)? Any suggestions?

I get a lot of start-ups (especially education, do-gooder sorts) asking if I can recommend someone for volunteer or relatively low-paying, for-a-good-cause UX work. If you're in the Bay Area, check out groups like Startup Drinks (http://sanfrancisco.startupdrinks.com/) and start socializing and making connections. 

Another way to build a portfolio is to take on some UX work at your current position or (even more time-consuming) build something yourself and show you you designed it, then optimized it.
