Nuance and IBM are collaborating on speech UI projects, and may have some recent publications. In the past I've noticed quite a bit of voice UI literature from Microsoft, but haven't seen much lately.
I totally agree with you that voice UI is underused, except in cars and customer service purgatory. Google is waiting in the wings with its voice search interface patent (US 7,027,987). I'm anticipating that voice UI's will hit a tipping point and explode on the scene sometime in the near future and a very short time later will be everywhere. Probably as soon as the cone of silence goes into mass production...
