I'm looking for examples where the UI triages tasks by feature or role. For example, Dreamweaver allows you to toggle the UI differently for designers vs developers: https://skitch.com/jeff.noyes/rqrut/dreamweaver
Alias Wavefront Maya allows you to triage the UI by Modeling | Animation | Rendering | Dynamics.
Do you know of others?

Final Cut Pro has various window layouts [1]. (Audio Mixing, Color Correction, Multiple Edits, Standard, Two Up)
Protools [2] has various modes that change how the interface reacts. Depending on if you are in shuffle spot slip or grid the editing if different. It also has some toggle shortcuts between the edit window and mixing window.
I have been told that tracktion 3 [3] has various modes but I have not really used it that much.

two examples come to my mind, Snagit: screen capture, image edit; outlook: calendar; task; contacts; email.
