I'm looking around for a one or two day course focusing on Adobe Fireworks. Any where from San Jose to San Francisco would work.

A good place to start would be the Fireworks usergroup Fire on the Bay. David Hogue is one of the organisers as well as being a great instructor.
Good luck with Fireworks. I find it to be an excellent tool for interaction design.
